Celebrity chefs Phil Vickery, Lesley Walters, Aldo Zilli and Antony Worrall Thompson are all backing the campaign to support pig farmers on the brink of extinction because of the surge in feed prices.
The four have contributed their favourite pork, bacon and sausage recipes to a new booklet, The Chefs Choose Pork, in support of the Pigs Are Worth It campaign. Featuring tips on how to achieve the perfect crackling and suggestions on alternative pork cuts, seasoning and accompaniments, the recipes encourage consumers to choose pork which carries the Quality Standard Mark because it is produced to extremely high welfare standards.
Phil Vickery says: “When I heard about the crisis facing pig farming I felt compelled to do my bit. As a chef I am passionate about using high quality ingredients and when it comes to pork, bacon, sausages and ham, for me that means choosing meat with the Quality Standard Mark. But it will simply disappear from our shelves if pig farmers don’t get a fair price soon.
“The Pigs are Worth It campaign is calling for a fair price for pig farmers, and Antony, Aldo, Lesley and I are all delighted to support it, through The Chefs Choose Pork Booklet, to help ensure that the farmers can keep producing the quality pork of which they are so justifiably proud.”
